Squash recipes needed.....

When we got back from a long weekend at my parents, we came home to lots of ripe veggies. Tyson couldn't wait to pick 'em. He has become quite proficient with tomato picking, but he has been patiently waiting for some squash. And low and behold there were three waiting for him.

I am so glad that I planted the vegetables this spring. It has become "our" thing. Tyson and I water them every night together. We also check for critters, and prune any leaves that aren't doing so well. Paul and Tyson have lots of things they do together; they fish, they kayak, and they do other "boy" things. So this is "our" thing! And I love it!

Now, I just need some more squash recipes.

  1. I love fried squash! I've also done the same recipe, but just baked it in the oven...laid the squash slices on a baking sheet and sprayed with Pam.


    FRIED YELLOW SQUASH

    6-8 yellow squash, cut into slices

    Add:

    1/3 c. flour
    1/3 c. cornmeal
    1 tsp. salt
    1/4 tsp. pepper

    Shake around in bowl until squash is coated well. Fry in skillet on medium heat in 1/4 cup oil until golden brown. Drain on paper towel

  2. Just thought of another:
    2 cups cooked rice
    1 can black beans
    1 can corn
    1 medium onion, thinly sliced
    2 squash, thinly sliced
    1 red bell pepper, thinly sliced
    1/4 cup chopped cilantro

    Cook rice according to package directions. Drain beans and corn and add to rice. Cook on low heat until warmed through. Saute onion, squash, and bell pepper in butter until tender. Mix together with rice mixture and stir in cilantro. Salt and pepper to taste!
